A good place to start would be with some summarized texts. A lot of people recommend the Foundations of Service Management book as it provides a high level view of the different management areas.
Capacity Management is covered in the new ITIL V3 core book Service Design, 18 pages of it. it is good stuff
(interestingly in the introduction to every one of the five new ITIL books except this one, the concept of capacity management is used an example of something that may NOT be a process but rather a function.)
